SAUCY CAULIFLOWER | |
1 lg. head cauliflower 1 c. chopped onion 1 c. unflavored yogurt 1/8 c. chopped coriander 1/4 tsp. ground cloves 1/2 tsp. ground cardamom 1 tbsp. chopped ginger root 2 tbsp. vegetable oil Sliced tomatoes Steam cauliflower for 10 minutes; drain. Combine the next 6 ingredients; mix well. Heat oil in a frying pan. Add yogurt mixture; simmer 6 minutes. Remove from heat and cool. Gently rub yogurt sauce over cauliflower. Place in a saucepan with 1 cup steaming liquid. Cover and simmer 30 minutes or until cauliflower is tender. Baste occasionally. Garnish with tomatoes. Makes 4 to 6 servings. |
