CRUMB PIE 
2 cups flour
2 heaping tsp. baking powder
1 1/2 cups light brown sugar
3/4 tsp. salt
1/3 cup butter
2 eggs
3/4 cup milk
vanilla or grated orange rind
2 Pillsbury pie crusts or homemade

Line two pie pans with crusts. Sift flour, baking powder and sugar into a bowl; add salt and butter. Mix well together until the mixture is crumbly. Measure out 1 cup of the crumbs and reserve. To the remaining crumbs, add egg yolks, milk and flavoring.

Beat egg whites until stiff; fold into mixture gently. Pour mixture into unbaked pie shells and sprinkle the 1 cup of crumbs thickly over the tops of the pie crusts.

Bake in a preheated 350°F oven for about 45 minutes.

Makes 2 7-inch pies. Wonderful for breakfast or brunch or a snack anytime!
