CLASSIC QUICK CHICKEN | |
4 chicken quarters, skinned, washed & drained (white, dark or mixture) 4 med. potatoes, peeled 1 (18 oz.) bottle of Classic Kansas City Bar-B-Q Sauce Slice peeled white potatoes into 3/8 inch thick rounds. Place half of the potatoes on the bottom of baking dish or pan. Arrange chicken on top of potatoes. Add remaining potatoes on to top of chicken parts. Pour one bottle (any flavor) of Classic Kansas City Bar-B-Q Sauce on top of everything. Cover and bake in a pre-heated 400 degree oven for 1 hour and 15 minutes. Remove cover during last 5 minutes to caramelize sauce. NOTE: Baste 2 times while cooking to enhance absorption of sauce and improve finished color. VARIATION: Use thick cut lean pork chops instead of chicken. Yield: Serves 4. |
