Combine 1 cup graham cracker crumbs and 1/4 cup melted butter in an 8" pie pan. Pat to make crust.
For Filling: Soften 11 ounces cream cheese. Add and blend until smooth; cream cheese, 2 eggs, 3/4 cup sugar and 1/2 teaspoon vanilla.
Pour into pan. Bake at 375 degrees for 20 to 30 minutes. Cool thoroughly.
Strawberry Glaze: In a medium saucepan combine 1/4 cup sugar and 2 tablespoons cornstarch. Stir in juice from frozen strawberries (thawed), 1 frozen container. Add 1 cup strawberries. Cook over moderate heat, stirring constantly until thick and clear. Stir in 1 teaspoon lemon juice. Spread over cheesecake. Chill thoroughly before serving. (Frozen cherries may also be used, or 1 can pie filling.)
