ST. PATRICK'S GREEN VELVET CAKE 
2 eggs
1 1/2 c. sugar
1 1/4 c. cooking oil
1 tsp. vinegar
2 1/2 c. self-rising flour
1 tsp. baking soda
1 c. buttermilk
1 tsp. vanilla
1 oz. green cake coloring

Sift flour and soda together, set aside. Beat eggs. Add sugar, oil and vinegar, blend well. Add egg mixture alternately with flour and buttermilk. Add vanilla and cake coloring. Mix well. Pour into 3 greased and floured cake pans, 8 or 9 inch. Bake at 350 degrees for 20 to 25 minutes.

FROSTING:

1 (8 oz.) cream cheese
1 stick butter
1 box powdered sugar
1 tsp. vanilla (mint if you wish)
1 c. nuts, chopped (opt.)

Combine.
