CARROT CASSEROLE 
1 lb. raw carrots (clean and slice)
1/4 lb. Velveeta cheese
1 stick butter
15 Ritz crackers

Cook carrots in water, 1 1/2 teaspoons sugar and 1/4 teaspoon salt until tender. Drain. Add 1/4 pound Velveeta cheese and 1/2 stick butter. Mix well in casserole.

Crumble the Ritz crackers and mix with 1/2 stick butter melted. Put on top of the carrots. Bake at 350 degrees for 20 minutes.
