CARROT CASSEROLE 
1 onion, sliced
1/3 c. butter
5 c. raw carrots, sliced
8 oz. Velveeta cheese
Ritz crackers

Cook carrots until done but not mushy; drain. Brown onions in butter.

In 2-quart casserole dish layer carrots and cheese. Then pour onions and butter on top. Sprinkle crushed crackers on top. Bake at 350 degrees for 30-40 minutes uncovered. (Can use crushed potato chips in place of cracker crumbs.)
