CARROT AND CHEESE CASSEROLE 
2 lbs. carrots
4 tbsp. butter
1/2 lb. Velveeta cheese
Toasted bread crumbs

Peel, slice and cook carrots until just tender. Place in casserole dish. Melt butter and cheese together, pour over carrots. Top with toasted bread crumbs. Bake at 350 degrees for 30 minutes.
