CARROT-CHEESE-RICE CASSEROLE 
2 c. cooked rice
2 1/2 c. grated carrots
1/3 lb. grated colby or cheddar cheese
2 eggs, beaten
1/4 c. milk
1 tbsp. butter, softened
1/4 c. chopped onion
1 tsp. salt
1/8 tsp. pepper

Mix all ingredients. Pour into a 1 1/2 quart casserole. Bake at 350 degrees for 45 minutes to 1 hour or until carrots are done. Serves 6.
