MACARONI & CHEESE - CARROT
CASSEROLE
 
1 1/3 c. elbow macaroni
1 1/2 c. cheese
1 1/2 tbsp. onion
1 1/2 tbsp. parsley
1 c. shredded carrots
1 tsp. salt
1/8 tsp. pepper
1/2 tsp. paprika
2 eggs
2 c. hot milk

Cook macaroni. Drain and pour cold water through it. Put it in a buttered baking dish. Add cubed cheese, chopped onion, parsley and seasonings. Add carrots. Beat eggs and add the hot milk to them. Pour over the macaroni. Bake at 350 degrees for 50 minutes or until set.
