SCALLOPED CHEESE & CARROT
CASSEROLE
 
12 med. carrots, peeled & sliced
1/4 c. butter
1 sm. onion, chopped
1/4 c. flour
1 tsp. salt
1/4 tsp. dry mustard
2 c. milk
1/2 tsp. pepper
1/4 tsp. celery salt
1 (1/2 lb. pkg.) cheddar cheese slices
3 c. buttered bread crumbs

Heat oven to 350 degrees. Cook carrots for 10 minutes and drain. Meanwhile, put butter in saucepan and cook onion 2 to 3 minutes. Stir in flour, salt, mustard and milk. Cook, stirring constantly until smooth. Add pepper and celery salt. This makes the sauce to be used.

In a 2 quart casserole, arrange carrots then cheese in layers until all are used, ending with carrots on top. Pour sauce over all and add buttered bread crumbs. Bake uncovered 25 to 30 minutes.
