CARROT & CHEESE CASSEROLE 
2 c. cooked mashed carrots (4 c. raw equals 2 c. cooked)
4 oz. butter
1/2 c. milk
3 eggs, beaten
2 c. grated cheese

Cook carrots in salted water; mash. Add butter, milk and eggs. Fold in cheese. Pour into greased baking dish. Bake at 300 degrees for 45 minutes. 8 servings.
