CRISPY CARROT CASSEROLE 
4 c. sliced carrots (1/4 thick)
1 sm. onion, chopped
Crushed potato chips
1/4 c. butter
1 c. diced Velveeta cheese

Cook carrots until tender. Drain and place in greased casserole. Dot with butter, stir in onions, sprinkle cheese and top with chips. Bake at 350 degrees for 20-30 minutes.
