CREAMY CARROT CASSEROLE 
4 c. sliced carrots
3/4 c. mayonnaise or salad dressing
1/4 c. chopped onion
2 tbsp. prepared horseradish
1/4 tsp. pepper
1/4 saltine crackers, crushed (1/2 c.)
1 tbsp. butter, melted
2 tbsp. snipped parsley
1/2 c. shredded American or Cheddar cheese

Cook carrots until tender. In a small bowl, stir together mayonnaise, onion, horseradish, 1/4 teaspoon salt, and pepper. Add to carrots in casserole; stir to combine.

In a small mixing bowl, toss together crushed crackers, butter, and parsley. Sprinkle cracker mixture over carrots. Cook, uncovered, 3 minutes in microwave. Add cheese; cook 1 to 2 minutes more or until cheese is melted and mixture is heated through. Makes 6 to 8 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
