KELLY'S CARROT CASSEROLE 
3 c. carrots (1 lb.) peeled and cut slices
10 soda crackers, crushed
2 tbsp. minced onions
1/2 c. grated cheddar cheese
2 tbsp. melted butter
1/2 tsp. salt
1/8 tsp. pepper
1/8 tsp. celery salt

Boil carrots, drain and reserve 2/3 cups of liquid. Mash carrots. Stir in crackers, onions, butter, salt, pepper and celery salt. Add reserved liquid. Put in buttered casserole. Sprinkle with cheese. Bake at 400 degrees for 15 minutes.
