CARROT CASSEROLE 
1 1/2 lb. carrots
1/2 c. onion, chopped
1/2 c. butter
1 c. Ritz cracker crumbs
4 oz. grated cheese (Longhorn)
Dash salt & pepper

Cook carrots in a small amount of water and salt. Saute onion in butter. Mix carrots and onions. Mix cracker crumbs and cheese, salt and pepper. Layer carrots and onions with cracker and cheese. Bake at 375 degrees for 20 minutes.
