CREAMY CARROT CASSEROLE 
4 c. sliced carrots
3/4 c. mayonnaise or salad dressing
1/4 c. chopped onion
2 tbsp. horseradish
1/4 tsp. pepper
14 saltine crackers (crushed)
1 tbsp. butter, melted
2 tbsp. snipped parsley
1/2 c. shredded American cheese

In a 1 1/2 quart casserole, microwave carrots in 2 tablespoons of water, covered, on high for 6 to 8 minutes or until tender, stirring once. Drain. In a small mixing bowl, stir together mayonnaise, onion, horseradish, 1/4 teaspoon salt and pepper. Add to carrots in casserole; stir to combine. In a small mixing bowl, toss together crushed crackers, butter and parsley. Sprinkle cracker mixture over carrots. Cook uncovered 3 minutes. Add cheese; cook 1 to 2 minutes more or until cheese is melted and mixture is heated thoroughly.

Since microwave ovens vary in power, you may need to adjust your cooking time.
