ZESTA CARROTS 
6 to 8 carrots, pared, cut lengthwise
2 lbs. horseradish (better not to over do)
2 tbsp. grated onions
1/2 tsp. salt
1/2 tbsp. butter
1/4 tsp. pepper
1/4 c. bread crumbs
Reserve 1/4 cup of water from cooked carrots
1/4 c. mayonnaise

Use fresh loose carrots for best results.

Arrange carrots in shallow baking pan. Combine horseradish, onion, liquid (water), salt and pepper and mayonnaise, pour over carrots. Combine the bread crumbs and melted butter over the two, sprinkle paprika over the crumbs, bake at 375 degrees 15 to 20 minutes. Bake a little extra if you wish. Serves 8.
