ZESTY CARROTS 
3/4 lb. carrots
1/4 c. juice from carrots
1/2 c. mayonnaise
1/2 tsp. horseradish
Salt and pepper
Cracker crumbs

Peel and cut carrots lengthwise and boil until tender. Pour and measure 1/4 cup juice from carrots and place into small mixing bowl. Add mayonnaise, horseradish, salt, and pepper. Put carrots into baking dish, add mayonnaise mixture. Sprinkle with cracker crumbs. Dot with butter, bake at low temperature to just warm carrots.
