STUFFED PEPPERS 
6 lg. green peppers
1 lb. ground beef
1 1/2 c. cooked rice
1 onion, chopped
1 (15 oz.) can stewed tomatoes, chopped
8 oz. Cheddar cheese, grated
2 cloves garlic, minced
1 tbsp. oregano
Salt and pepper

Core peppers. Simmer, covered for 10-15 minutes. Brown meat, onion, garlic with oregano, salt and pepper. Add rice and tomatoes. Stuff peppers with mixture. Top with cheese. Bake at 400 degrees for 15 minutes.
