SPICY PINEAPPLE ZUCCHINI BREAD 
3 eggs
2 c. sugar
1 c. salad oil
2 tsp. vanilla
2 c. cubed zucchini
1 med. size can crushed pineapple, drained
3 1/2 c. flour
1 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
1 1/2 tsp. cinnamon
3/4 tsp. nutmeg
1 c. chopped nuts

Beat eggs, sugar, oil and vanilla until foamy and thick. Stir in zucchini and pineapple, drained. Combine flour, soda, baking powder and salt, cinnamon, nutmeg and nuts. Stir all into zucchini mix. Divide into 2 greased and floured loaf pans. Bake 1 hour at 350 degrees.
