SPINACH SOUFFLE 
6 eggs
6 tbsp. flour
1 stick butter
1/2 lb. Velveeta cheese
1 pt. sm. curd cottage cheese
2 pkgs. frozen chopped spinach

Cook spinach until thawed; drain well and separate. Place in casserole dish. Dice cheese and butter and add to spinach. Beat eggs and combine rest of ingredients. Bake for 30 to 45 minutes at 350 degrees.
