SWEET POTATO CASSEROLE 
2 1/4 lb. yellow sweet potatoes, cooked, pared & mashed
6 tbsp. butter
2 eggs, beaten
1/2 c. sugar
1/2 c. chopped pecans
1/2 c. flaked coconut
1/2 c. orange juice
1/2 tsp. salt
1/2 tsp. vanilla
1/2 tsp. cinnamon
1/2 tsp. nutmeg

Cook potatoes, cool in cold water. Pare and mash. Stir in melted butter. In large bowl of mixer, beat in other ingredients until very fluffy. Pour in greased casserole. Bake at 350 degrees for 30 minutes.
