SWEET AND SOUR SPARE RIBS (RIBLETS) | |
2 to 2 1/2 lbs. ribs 1 bunch green onions 4 tbsp. soy sauce 4 tbsp. cooking wine 4 to 5 tbsp. sugar 5 tbsp. vinegar Wash ribs. Cut ribs into small pieces. Cut green onion into 2-inch lengths. Turn heat to medium high. Put in 1 tablespoon oil in pot. Slowly add ribs into the heated oil. Stir the ribs until they turn a whitish color. Put in the soy sauce. Add the cooking wine. Sprinkle in the sugar and finally the vinegar. Mix well. Spread the green onion over and turn heat to medium and cook for 20 to 30 minutes. Then turn heat to medium-low until done. TIPS: A little boiling water can be added, if needed. It takes about 2 to 3 hours to be ready. Pour the oil out before serving. The amount of sugar and vinegar should be adjusted to individual taste.
