PARMESAN FLEECED CHICKEN 
1 chicken, 3 lbs., cut up
4 tbsp. melted butter
4 tbsp. lemon juice
1 med. clove garlic, minced
1/2 tsp. dried tarragon leaves
1 c. fresh rye bread crumbs
1/2 c. Parmesan cheese
1/4 c. minced fresh parsley

Remove any excess fat and skin from the chicken. Combine the butter, lemon juice, garlic and tarragon.

In a bowl, combine the bread crumbs (blended for even texture), Parmesan cheese and parsley. Dip the chicken in the butter. Roll in the crumb mixture. Coat each piece well, patting with hands.

Place on a large baking sheet. Drizzle with remaining butter. Sprinkle with a little extra cheese, if desired. Bake at 350 degrees for 40 to 50 minutes until chicken is tender and golden brown. 4 servings.
