BANANA NUT BREAD 
1 1/2 c. unbleached flour
3/4 tsp. baking soda
1/4 tsp. salt (opt.)
1 c. sugar
2 eggs, slightly beaten or egg substitute
3/4 c. vegetable or canola oil
2 tbsp. milk
1 tbsp. vinegar
2 to 3 mashed over ripe bananas
1/2 c. chopped pecans or walnuts

Preheat oven to 325 degrees. Grease and flour bread pan. Sift together flour, soda, salt. Add sugar, eggs, oil, milk and vinegar. Blend together. Fold in bananas and nuts. Pour into pan. Bake 1 hour and 10 minutes. Let cool in pan for 15 minutes, then turn out. Makes 1 loaf.
