BANANA BREAD | |
3 med. bananas, very ripe 1/2 c. broken walnuts (sm. pieces) 1 1/2 c. all-purpose flour or 3/4 c. whole wheat and 3/4 white 1 tsp. baking powder 1/2 tsp. baking soda 1/8 tsp. salt (optional) 2 eggs 1 c. sugar 1/2 c. corn or canola oil 1/2 tsp. vanilla Preheat oven to 350 degrees. 1. In blender puree bananas until smooth. Pour into small bowl. 2. In blender beat eggs, add sugar, blend for 15 seconds. Add oil and vanilla, process until well mixed. 3. Measure flour, baking powder and soda, plus optional salt together; stir until blended. 4. Pour egg, sugar mixture into large bowl. Alternately add flour and bananas. When completely blended, add chopped nuts. 5. Pour into greased loaf pan. Bake 1 hour or until toothpick tests dry. 6. Cool 10 minutes on rack, then turn out to finish cooling. |
