BANANA CAKE/BREAD 
1/2 c. butter
1 c. white sugar
3 egg whites
2 c. flour
1 tsp. baking soda
1/4 tsp. salt (if any)
1/2 c. buttermilk (skim milk with 2 tbsp. lemon juice or vinegar)
1 c. (heaping) mashed bananas

Cream shortening, sugar and egg whites. Add dry ingredients alternating with the buttermilk and bananas. Bake at 350 degrees, check after 30 minutes, depending on size of pans used. Makes one big loaf size or mini bundt pan.
