BRAN FLAKE MUFFINS | |
1 1/2 c. flour 2/3 c. firmly packed brown sugar 1 tsp. baking soda 1/2 tsp. ground cinnamon 1/4 tsp. salt 2 egg whites 1 1/2 c. skim milk 1/4 c. oil 3 c. Post Bran Flakes 1/3 c. raisins Heat oven to 400 degrees F. Mix flour, brown sugar, baking soda, cinnamon and salt in large bowl. Beat egg whites in small bowl; stir in milk and oil. Add to flour mixture; stir just until moistened. (Batter will be lumpy.) Stir in cereal and raisins. Spoon batter into greased muffin pan, filling each cup 2/3 full. Bake 20 minutes or until golden brown. Serve warm. Makes 12. |
