BRAN FLAKE MUFFINS 
1 1/2 c. flour
2/3 c. firmly packed brown sugar
1 tsp. baking soda
1/2 tsp. ground cinnamon
1/4 tsp. salt
2 egg whites
1 1/2 c. skim milk
1/4 c. oil
3 c. Post Bran Flakes
1/3 c. raisins

Heat oven to 400 degrees F. Mix flour, brown sugar, baking soda, cinnamon and salt in large bowl. Beat egg whites in small bowl; stir in milk and oil. Add to flour mixture; stir just until moistened. (Batter will be lumpy.) Stir in cereal and raisins.

Spoon batter into greased muffin pan, filling each cup 2/3 full. Bake 20 minutes or until golden brown. Serve warm. Makes 12.

Yes! I've been looking for a good HEALTHY bran muffin recipe! I looked at the other recipes for bran flake muffin recipes and all of them (most of them) ask for loads of butter/shortening/oil, too many eggs, way too much white sugar. I found yours the most appealing and the end result was delicious! Thank you for posting this recipe - this will now go into my recipe file!

Yum. Followed the recipe exactly as is except replacing the raisins with walnuts. A dense, yummy muffin. I am nine months pregnant, with horrible back pain, and it only took me about 5 minutes to throw together the batter! I was sitting down and eating my muffins before my back even started up!
