SQUASH FRITTERS 
2 c. cooked, mashed yellow squash
2 eggs, beaten
1 sm. onion, chopped
1/2 c. cracker crumbs
Hot oil
Salt & pepper to taste

Combine squash, eggs, onion, seasonings and cracker crumbs; mix well. Drop mixture by tablespoons into hot oil. Cook until golden brown. Turn only once. Yields 6 servings.
