GARLIC SALMON 
1 1/2 to 2 lbs. fish fillets
1/2 stick butter
1/8 c. extra virgin olive oil
6 to 8 garlic cloves
1/2 lemon
Paprika

Mince garlic fine and add butter and olive oil to medium frying pan. Simmer garlic very slowly until lightly browned. Dry fillets, then sprinkle with lemon; dip in garlic mixture and let stand for 1/2 hour. Prepare a barbecue to a very hot bed of coals; dust fillets with paprika. Place fillets on grill and turn after 4 to 5 minutes, depending on thickness. Serve immediately.
