COCONUT CHERRY BARS 
1/2 c. packed brown sugar
1 1/2 c. Bisquick baking mix
1/4 tsp. almond extract
1 c. flaked coconut
3 tbsp. Bisquick baking mix
1/4 c. butter, softened
2 eggs
1/2 c. granulated sugar
1/2 c. chopped almonds
1/2 c. maraschino cherry halves

Heat oven to 350 degrees. Mix brown sugar and butter. Stir in 1 1/2 cups baking mix. Press in greased rectangular pan, 13 x 9 x 2. Bake 12 minutes. Beat eggs in medium bowl with fork; mix in granulated sugar and almond extract. Stir in coconut, almonds and 3 tablespoons baking mix; spread over baked layer. Arrange cherries on top. Bake until light golden brown and set, 22 to 25 minutes; cool. Cut into bars about 2 x 1 1/2 inches. Yield 36 bars. High altitude; heat oven to 375 degrees. Baking mixture will be crumbly. Decrease second bake time to 18 to 20 minutes. These bars are very crisp and keep well.
