SQUASH CASSEROLE 
2 lbs. cooked squash

Drain well. Beat with mixer or potato masher.

1 stick butter
1 egg
1 sm. chopped onion
1 c. grated cheese
1 c. crushed Ritz or saltine crackers
1/2 c. milk
Salt and pepper to taste

Mix well and bake at 400 degrees in casserole dish for 30 minutes.
