SPANISH RICE 
1 tbsp. bacon grease
3/4 c. long grain white rice (not minute rice)
1/2 c. chopped onion
1 clove garlic (minced)
2 sm. diced canned tomatoes
2 tbsp. tomato juice
2 c. hot water
1/2 tsp. salt

In skillet, heat bacon grease on medium high heat. Add rice; cook and stir until rice is golden brown. Add onion and garlic; stir and cook 3 more minutes. Add all remaining ingredients. Cook uncovered on medium high heat for 20 minutes, stirring only once after 10 minutes. Check rice for doneness by tasting a few grains. If rice is too firm add a little water; cover and cook 5 minutes more. Serves 6.
