SPANISH RICE 
2 c. white rice
1 med. onion, chopped
1 lg. clove garlic, minced
1 med. bell pepper, cut in rings
1 tsp. cumin, ground
Salt and pepper to taste
Shortening or lard for saute
1 can tomatoes (16 oz.) crushed
2 c. hot water

Heat shortening, add rice; stir until brown. Add onion, garlic, tomatoes, cumin, salt and pepper, hot water. Mix gently. Boil. Arrange bell pepper rings on top. Cover and simmer until done, about 20 minutes.
