CHOCOLATE MAYONNAISE CAKE WITH
BUTTER WHIPPED FROSTING
 
3 c. unsifted flour
1 1/2 c. sugar
2/3 c. unsweetened baking cocoa
2 1/4 tsp. baking powder
1 1/2 tsp. baking soda
1 1/2 c. real mayonnaise
1 1/2 c. water
1 1/2 tsp. vanilla

FROSTING:

4 tbsp. flour
1 c. milk
1/2 c. shortening
1/2 c. butter
1 tbsp. almond flavor
1 c. sugar

Cake: In large bowl, sift all dry ingredients. Blend in wet ingredients. Beat 4 minutes on medium speed until well mixed. Bake in 350 degree oven 30 minutes or until center test comes clean. Makes 1 (13x9x2) or 2 (9 inch) cake layers.

Frosting: Mix flour and milk until well blended. Heat over low heat until thick, refrigerate until cool. Whip butter, shortening, sugar and flavoring for 5 minutes. Add cooled flour mixture. Beat for additional 5 minutes.
