OATMEAL CAKE WITH PEANUT BUTTER
FROSTING
 
STEP 1:
1 c. oatmeal
1 1/2 c. hot water

Pour on oatmeal, let set 5 minutes.

STEP 2:
1 c. white granulated sugar
1 c. brown sugar
1 stick butter
2 eggs
1/2 tsp. salt
1 tsp. vanilla

Cream together.

STEP 3:
1 1/2 c. flour
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. baking powder

STEP 4:

Add oatmeal to step 2, then add sifted ingredients. Bake at 350 degrees for 35 to 40 minutes. Use 9x13 pan.

PEANUT BUTTER FROSTING:

1 1/2 sticks butter
2 c. brown sugar
4 tbsp. water
2 tbsp. vanilla (you must use 2 tablespoons vanilla)

Bring to boil for 1 or 2 minutes. Remove from heat and stir in 1 1/3 cups peanut butter until smooth. It will not be real thick but thickens on the cake as it cools. Put the hot frosting on the cake while the cake is still hot.

I needed a peanut butter frosting recipe that required no milk or eggs, and I tried this one. It was very, very runny, even when set to cool. The taste was decent, but peanut butter tastes like peanut butter. Not creamy at all. When cooled, seemed to be more of an icing or glaze rather than a frosting. I tried it on chocolate cupcakes, but was too runny and didn't sit well. Instead, I cut open the cupcakes and poured the "frosting" inside, and had them be lava cakes.

I have a very old recipe almost like this from the farmers Coop in Alabama. The icing is a bit different. Has 1 c sugar, 1/2 c water and 3/4 cup peanut butter.
