TOMATO, BASIL AND AVOCADO
SANDWICHES
 
1 Haas avocado
1 cup tomato sauce or pasta sauce (homemade or store-bought)
dried parsley flakes
crushed red pepper flakes
Old Bay seasoning or Lawry's seasoned salt, to taste
4 slices whole wheat bread

Note: For the tomatoes, you can use diced, stewed tomatoes etc. based upon taste preference.

Place bread under broiler and heat until just browned (about 3 minutes). Once the bread has browned spread a layer of tomato/pasta sauce on each slice and return under the broiler for another 1 or 2 minutes to heat through.

Meanwhile, halve avocado, remove the pit and slice lengthwise into thin strips. You should get 6 to 8 strips per half. On stove-top, heat a small skillet on high just to warm it.

Once bread has heated and tomatoes have browned slightly, remove from the broiler and season with crushed red pepper flakes and parsley flakes. Line avocado slices on each slice of bread and dust with Old Bay seasoning (or seasoned salt). Fold bread into a sandwich and place the heated skillet on top of the sandwich to press. Hold for 1 minute or until a sandwich comes together.

Slice in halves and serve. Enjoy!!
