HOT SALAD DRESSING WITH BACON 
1/2 c. sugar
2 tbsp. flour
2 eggs
1/2 c. vinegar
1 c. water
2 or 3 slices of bacon, cubed & fried

Mix sugar and flour in a bowl. Add eggs and mix well. Add vinegar and water and mix. Fry bacon cubes until brown. Pour off some of the fat, if desired. Pour liquid mixture into bacon pan, being careful it does not spatter. Cook until thickened. Serve hot over dandelion greens, lettuce or fresh spinach.

A tradition is to pick dandelion greens on Good Friday, providing the Easter season is not too early.
