BROCCOLI RICE CASSEROLE 
1 tbsp. salad oil
1 sm. onion
1 frozen pkg. broccoli, partly thawed
1 can cream of chicken soup
1/2 c. Velveeta cheese
1/2 c. milk
1 dash of salt & pepper
1/2 c. rice, uncooked
Parmesan cheese

Heat oil, add onion and broccoli. Cook 5 minutes, stirring constantly. Add soup. Heat to boiling. Add cheese, milk, salt and pepper. Cook 3 minutes. Cook rice by package directions and add to mixture. Pour into greased casserole. Sprinkle with Parmesan cheese. Bake at 350 degrees for 30 minutes. Serves 6 to 8.
