CAULIFLOWER QUICHE 
1 (8 oz.) pkg. frozen cauliflower (or 1/2 fresh head)
1 1/4 c. Cheddar cheese, shredded
1/2 c. green bell pepper, chopped
1/3 c. onion, finely chopped
1 c. milk
3/4 c. egg substitute (I use one egg and water)
1/2 c. Bisquick
1/4 tsp. paprika
1/8 tsp. pepper

Preheat oven to 375 degrees. Cook cauliflower according to package directions (omit salt). Drain and chop - remove excess water. Coat 9 inch pie plate with cooking spray. In pie plate layer - cauliflower, cheese, green pepper and onion. In blender - combine remaining ingredients - blend 15 seconds. Pour over vegetables. Bake for 30-35 minutes or until set. Let stand 5 minutes before serving.
