1 boiled chicken, deboned
1 pkg. biscuit mix
1 pkg. cornbread mix
1/2 sm. onion, diced
1/2 c. celery, diced
1 tsp. sage
1 tsp. poultry seasoning
2 eggs
Salt and pepper to taste
Approximately 2 c. chicken broth

Prepare biscuits and cornbread as by their own directions and set aside to cool. These can also be made up the night before. Line the bottom of an 8x10 inch pan with pieces of chicken.

Combine onion, celery, sage, poultry seasoning and eggs. Add cornbread and biscuits, crumble each by hand as you add to the egg mixture. Stir in 2 cups of chicken broth and salt and pepper to taste. (Increase or decrease broth by the dryness, you like your dressing.) Place over chicken or turkey and cook at 350 degrees until fork comes out clean.
