SHRIMP CREOLE 
2 c. fresh shrimp, shelled & cleaned (about 1 lb.)
1 c. onion, sliced
1 c. celery, sliced
1 sm. green pepper, diced
1 clove garlic, minced
Oil for sauteing
1 tsp. salt
1 tsp. sugar
2 tbsp. flour
1/2 c. water
2 1/2 c. canned tomatoes
1/8 tsp. marjoram
1 tsp. chili powder
1 tbsp. vinegar
1/2 c. okra (optional)

Saute vegetable in oil until tender. Add salt, sugar chili powder, marjoram and flour. Blend with 1/2 cup water. Cook over low heat until thickened, about 15 minutes. Add tomatoes, vinegar and okra. Cook for 5 minutes. Add shrimp and cook for 5 minutes more. Don't over cook shrimp, toughens. Serve on rice.
