LEMON SAUCED CHICKEN
4 chicken breasts, skinned
2/3 c. water
2 chicken bouillon cubes
Grated peel of 1 lemon
4 tbsp. lemon juice
1/2 tsp. non caloric sweetener
Paprika
Salt
Pepper

Rinse chicken breasts and place side by side in a shallow microwave safe dish. Microwave water in a 1 cup measure on high 30 seconds or until boiling. Add bouillon and dissolve. Add grated lemon peel, juice and sweetener. Pour evenly over chicken breasts. Sprinkle with paprika. Cover baking dish with lid or vented plastic wrap. Microwave on high 15 to 17 minutes giving dish a half turn mid way through cooking. Let stand covered for 10 minutes. Season to taste with salt and pepper. Spoon sauce over chicken at serving time or over rice. For conventional oven, bake covered at 375 degrees 30 minutes then uncovered about 10 minutes longer until lightly browned. Serves 4

Since microwave ovens vary in power, you may need to adjust your cooking time.
