OVEN FRIED CHICKEN WITH LEMON
SAUCE
 
SAUCE:

1 tbsp. soy sauce
1/2 tsp. salt
1/2 tsp. pepper
1/4 c. salad oil
1/2 lemon rind, grated
1 clove garlic, crushed

CHICKEN:

1/4 c. flour
1 tsp. salt
1/4 tsp. pepper
2 tsp. paprika
2 1/2 - 3 lb. fryer, cut up
1/2 c. butter, melted

Make sauce by combining all sauce ingredients in bowl. Mix well. Refrigerate at least 1 hour before using.

Preheat oven to 400 degrees.

Combine flour, salt, pepper and paprika and coat pieces of chicken. Arrange chicken skin side down in a single layer in butter. Bake, uncovered 30 minutes. Turn chicken and pour sauce over it. Bake an additional 30 minutes or until chicken is golden brown and tender. Serves 4.
