LEMON BUTTER BARS 
2 c. flour, unsifted
1 c. unsalted butter, softened
1/2 c. plus 1 tbsp. confectioners sugar
4 eggs
2 c. granulated sugar
1 tsp. baking powder
1/2 tsp. salt
2/3 c. fresh lemon juice

Beat together flour, butter and 1/2 cup confectioners sugar until well blended. Press into bottom of 9 x 13 inch pan. Bake 25 to 30 minutes or until lightly golden at 350 degrees. Beat eggs, granulated sugar, baking powder, salt and lemon juice until smooth. Pour over hot crust. Bake 15 minutes more or until bubbly and lightly browned. Cool completely in pan on wire rack. Dust lightly with remaining confectioners sugar. Cut into 2 1/2 x 1 1/2 inch pieces. Store in airtight container at room temperature.
