ITALIAN RICE 
1 lg. onion, chopped
1 lg. bell pepper, chopped
1/2 tsp. Italian seasoning
4 oz. can mushrooms, chopped
1 c. rice, uncooked
2 c. beef consomme
1/2 c. celery, chopped
3/4 stick butter
1 tsp. parsley
3/4 tsp. salt
1/4 tsp. pepper

Saute pepper, onion and celery in butter. Mix remaining ingredients except rice and beef consomme. Pour into 2 quart casserole. Add rice and consomme. Cover and bake for 1 hour at 350 degrees.
