APPLE SWEET - SWEET POTATOES 
3 lg. sweet potatoes
3/4 c. water
3 medium apples, cored, peeled, and sliced 1/2 inch thick
1 c. unsweetened apple juice
2 tbsp. cornstarch
3 tbsp. unsweetened apple juice
1 tbsp. honey
1/4 c. wheat germ
1/4 c. graham cracker crumbs

Cook sweet potatoes in water until tender, about 20 minutes. Peel and slice 1/2 inch thick. Layer in 2 quart casserole. Top with apple slices. In saucepan, bring to boil 1 cup apple juice; dissolve cornstarch in 3 tablespoons apple juice; add to hot apple juice. Stir until thickened. Stir in honey; pour over apples and sweet potatoes. Combine wheat germ and graham cracker crumbs; sprinkle over top of casserole. Bake at 350 degrees for 45 minutes.
