SCALLOPED SWEET POTATOES AND APPLES | |
6 sweet potatoes 2 c. apple slices 1 c. brown sugar, firmly packed 3/4 c. chopped pecans 1/2 tsp. salt 1 tsp. mace 1/2 c. butter Cook sweet potatoes just until tender. Peel and cut into cross-wise slices 1/4 inch thick. Butter a 2 quart casserole and arrange 1/2 of the sweet potatoes in the bottom; then 1/2 of the apple slices. Sprinkle with 1/2 of the brown sugar, salt, and mace. Dot with 1/2 of the butter, then repeat the layer, ending with apples, seasonings, pecans, and butter. Bake at 350 degrees for 50 minutes. Serves 6. |
