PECAN PRALINES 
3 c. sugar
1 tsp. baking soda
3 c. pecans halves
3 tbsp. bourbon
1 c. buttermilk
1/2 stick butter
1 tsp. vanilla

In saucepan, cook the sugar, buttermilk, soda and butter, until soft ball stage, 240 degrees, about 5 minutes. Add the pecans, vanilla and bourbon. Remove from heat and beat until creamy about 30 seconds. Immediately drop by tablespoons onto wax paper. Let harden. Makes about 2 dozen.
